Recipe of the Week: Pimento Cheese

Pimento Cheese has long been a southern staple but lately we have noticed it popping up everywhere. Our version is a very simple one but delicious.
2 c. (8 oz.) grated sharp Cheddar cheese, softened
8 oz. cream cheese, softened
1/4 to 1/2 c. mayonnaise
Dash garlic powder
4 oz. jar diced pimento, drained
Mix all ingredients together. Makes about 3 cups.
